Roasted baby asparagus is one of my all time favorite snacks. And it’s so easy! A few minutes in the oven, some salt, pepper and olive oil, so good.
Half-way through the cooking, flip the asparagus and add some more salt and pepper. I like to roast it just until the tips are a little crisp. This makes a great stand-alone snack, or an even better side dish to some salmon and loaded mashed potatoes! (More on that later…)
Roasted Baby Asparagus
1 package baby asparagus
Extra Virgin Olive Oil
Pre-heat oven to 350 degrees. Cut ends off asparagus and lay on cookie sheet. Drizzle with EVOO and generously add salt and pepper. Roast for 20 minutes, turning over halfway through. Enjoy!
