Waffle Recipe adapted from King Arthur’s Flour
2 large eggs
1 3/4 cups buttermilk
1/2 cup (1 stick) butter, melted and cooled to room temperature
2 teaspoons vanilla
2 cups Round Table Unbleached Pastry Flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon soda
1 teaspoon salt
In a medium-sized mixing bowl, beat together the eggs, buttermilk, melted butter or margarine and vanilla. In another bowl whisk together the dry ingredients. Combine the wet and dry ingredients just until almost smooth. Spray your waffle iron with a non-stick cooking spray before preheating it. For an 8-inch round waffle iron, use about 1/3 cup batter. Cook for 2 to 3 minutes, until the iron stops steaming.
Brandy Strawberry Topping
2 cups fresh strawberries
1/4 cup sugar (this is mostly to taste, depending on desired sweetness)
1/4 cup brandy
Dice strawberries and put then in a sauce pan with sugar and brandy. Stir well, over medium-high heat until the liquid from the strawberries starts coming out. Add a pinch of cornstarch at a time until mixture thickens slightly. Reduce to low and cook until waffle batter is finished (10 min or so). Top cooked waffles with butter and strawberry topping.
Sometimes on Saturday mornings, you need to sleep in. Sleep in good and long, and don’t get out of bed until you’re thoroughly ready to. And when you do wake up, you need cozy clothes, a cup of coffee, and snuggles from your kitty. And after all that…you need waffles.
Waffles are one of those comforting breakfast foods you can top with just about anything. Maple syrup, chocolate, fruit, whipped cream; there’s no wrong topping for a waffle. I like my waffles golden and crispy, smeared with melted butter and topped with brandy strawberry topping. Seriously, try it. And while you do, turn on some Gilmore Girls or I Love Lucy re-runs, and contemplate all the errands you’re going to blow off that day.
