Do you ever have those days when nothing sounds appealing? Those days when you surf food blog after food blog, and still nothing sounds good? I had that day. Until I found a picture of a BBQ pizza, and then it was all over. Decision made. BBQ pizza for dinner was happening.
I had to use Sweet Baby Rays BBQ sauce. Obviously. Some day I’ll make my own pizza dough, it really is delicious. However, when you’re in a pinch, bought dough works as well. So swirl on the sauce, nice and thick!
And then you pile on the toppings! I did a sort of, empty everything in the fridge that sort of goes with BBQ. Bacon, mushrooms, cilantro, onion, it all just piles on up, nice and chunky. Mmm…
And of course the cheese, you can’t forget the cheese! Centerpiece of ALL pizza creations. Don’t listen to the vegans, you need the cheese.
And then you wait. Wait for the magic to happen. Wait for the baking to transform your pile of delicious fridge-ness into a cohesive pizza creation.
Look. At. That. Look at it! Slice it up and top with fresh cilantro. Trust me on that one. Dip in some ranch dressing if you like – I prefer Hidden Valley Organic. And then? You eat. And possibly (definitely) send a few pics to your fiance. Just so he know’s what’s in store…

Best BBQ Pizza
Sweet Baby Ray’s BBQ Sauce
1 Tbsp butter
1 chicken breast
3 garlic cloves
3 pieces bacon
1/2 red onion
1/2 cup mushrooms
1/4 cup basil
1/2 cup cilantro
1 1/2 cups mozzarella
red chili pepper flakes
Preheat over to 400. Cut chicken breast into small chunks, and sauté with garlic, red chili flakes and butter in a frying pan until done. Add 1/4 cup of the BBQ sauce and toss until coated. Empty chicken into a bowl and set aside. Wipe pan clean and fry bacon pieces until crisp. Remove bacon from pan and set on paper towels to cool, then dice. Toss diced mushrooms into pan and sauté until cooked. While mushrooms cook, finely chop red onion, basil, and cilantro.
Spread pizza dough on pan, and cover with BBQ sauce. Top with bacon, chicken, basil, red onion, mushrooms, and cheese. Bake for 15-20 minutes or until crust is crisp and cheese is browning. Top with cilantro, and let cool 5-10 minutes. Slice and enjoy!
